Ingredients

  • 5 oz (about 150 g) halloumi cheese
  • 6 slices ciabatta or similar crusty bread

Instructions

  1. Slice the halloumi into six slices about 0.5 inches (1 cm) thick. Heat a non-stick skillet over medium-high heat and grill the slices for about one minute per side, until golden brown. Remove and let cool slightly, then cut each slice into three pieces.
  2. Toast the bread slices until crisp. In a small bowl, mash the avocado and season with salt and pepper to taste.
  3. Spread about 1 heaping tablespoon of mashed avocado on each toasted slice. Top with pieces of grilled halloumi, then drizzle each tartine with pomegranate molasses. Serve immediately while the halloumi is warm.

Notes

If you don’t have pomegranate molasses on hand, you can reduce pomegranate juice until it thickens into a syrupy glaze. Taste the molasses drizzle and adjust the amount to your preference — a little goes a long way to add sweet‑tart contrast.
