Creamy Avocado Beef Sliders

I’m excited to share that this year I’m serving as a Brand Ambassador for H-E-B. It’s the grocery store I visit most often—truly a second home. Since moving to Houston, H-E-B has been my go-to for everything from fresh produce and pantry staples to flowers, books, herbs and even patio furniture. One of the perks I love is highlighting their monthly Primo Picks.

July is winding down, but there’s still time to stop by your local H-E-B and explore this month’s Primo Picks. Last night I used several Primo Picks to pull together a quick and delicious dinner. One new item I found only at H-E-B was Whataburger’s ketchup — Shaun is obsessed with their spicy ketchup, and we now have three bottles sitting in our pantry.

I also picked up a flavorful Greek olive oil with attractive packaging. Admit it—you sometimes buy things because the packaging looks great. I’m definitely guilty of that!

For dinner we paired three Primo Picks with sliders. My side was sweet potato chips and salsa, while Shaun enjoyed borracho beans. He loved those beans so much he’s already planning to pick up extra cans the next time we’re shopping. Ingredients

  • 1.25 pounds (6 small sliders) HEB prime ground chuck sliders 80/20
  • 1 medium onion, sliced
  • 2 Tbsp butter
  • Grill Mates® Worcestershire Pub Burger Seasoning
  • 1/2 cup cotija queso cheese, grated
  • 1/4 cup plain greek yogurt
  • 1 avocado
  • 1/4 tsp salt
  • 1 tsp adobe sauce
  • 1/2 tsp fresh squeezed lemon juice
  • 6 Hawaiian Sweet Rolls

Instructions

Heat the grill to medium-high.

Place the sliced onion and butter in a piece of foil, seal it so nothing escapes, and place the packet on one side of the grill to cook alongside the sliders.

Season both sides of each slider with Worcestershire Pub seasoning. Oil the grill grates and cook the sliders 7–8 minutes per side, or until done to your liking. Remove the sliders and the onion packet from the grill.

Combine the Greek yogurt, avocado, salt, adobe sauce and lemon juice in a food processor and blend until smooth. Grate the cotija cheese.

To assemble each slider, place the bottom half of a roll on a plate, add a beef slider, top with the grilled onions, a spoonful of avocado sauce and a sprinkle of cotija cheese, then finish with the top half of the roll.
