How to Make Lucky Charms Rice Krispie Treats

- Melt the marshmallows. Turn the heat off once the butter has melted. Add 16 ounces (about 454 g) mini marshmallows to the pot and stir vigorously until they melt from the residual heat. If needed, return to very low heat briefly — avoid overheating.
- Combine with cereal. Stir in 1 teaspoon vanilla and 1/8 teaspoon kosher salt. Add the cereal mixture in two batches, folding gently to ensure every piece is coated with marshmallow.
- Transfer and press. Pour the mixture into the prepared pan. Using a greased rubber spatula or a piece of lightly greased parchment, press the mixture down gently to form an even layer. Press reserved Lucky Charm marshmallows onto the top if desired.
- Cool and cut. Allow the treats to cool completely so they set. Use a sharp knife to cut into squares and enjoy.
