No-bake delight: whole fresh strawberries, a layer of silky ganache, a dreamy whipped filling, and chocolate shavings to finish. This pie is an impressive, oven-free dessert perfect for gatherings, celebrations, or a special weekend treat.
Happy Pi/Pie Day! I couldn’t wait to share this recipe after making it — it was an all-around winner and exceeded my pie expectations.
Here’s how it all comes together, step by step.

Start with a simple Oreo crust—just crushed cookies and butter pressed into a springform pan. Chill it to set while you make the rest.
Next is a rich chocolate ganache made from chocolate and heavy cream, gently heated until smooth and glossy.

Arrange whole, ripe strawberries on the chilled ganache. Using whole berries creates a lovely texture and an elegant presentation.

The filling is remarkably light yet stable — creamy chocolate blended with cream cheese and folded into whipped cream. There’s a small tang from lemon that brightens the flavor and keeps the filling balanced.
Finish with dark or milk chocolate shavings for a delicate crunch and a final chocolate note.
The result: a no-bake strawberry chocolate pie that combines crunchy Oreo, juicy berries, a silky ganache layer, and a whipped chocolate filling. Each bite delivers contrast and harmony — crumbly cookie, bright strawberry, creamy filling, and chocolate topping.
My family devoured this pie — it disappeared quickly and earned rave reviews. It’s easy to make, visually impressive, and perfect for spring and summer when strawberries are at their best.
Strawberry Chocolate Pie
Makes 8–10 servings
Ingredients
Crust:
25 Oreo cookies
1/2 cup butter, diced
Filling:
1 Tablespoon butter
3 oz unsweetened baking chocolate, chopped
8 oz cream cheese, diced
2 Tablespoons lemon juice
1/2 cup powdered sugar
1 cup heavy cream
1/4 cup grated chocolate (for garnish)
Ganache:
1/2 cup baking chocolate
1/2 cup heavy cream
2 cups strawberries, stems removed, kept whole
Method
1. Prepare a springform pan with a light coating of cooking spray and set aside.
2. To make the crust: Pulse Oreos and butter in a food processor until fine crumbs form. Press the mixture firmly into the prepared springform pan, up the sides and flat on the bottom (the base of a sprayed glass helps). Refrigerate for 30 minutes to set.
3. To make the filling while the crust chills: Bring about 1 cup of water to a simmer in a small saucepan. Place the chopped chocolate and 1 tablespoon butter in a metal bowl and set it over the hot water (bowl should not touch the water). Stir until chocolate and butter are melted and smooth. Remove from heat.
4. Add the diced cream cheese to the melted chocolate and stir until fully incorporated. Stir in the lemon juice, then add the powdered sugar and mix until smooth. Chill the mixture in the refrigerator for 20–30 minutes so it firms slightly.
5. Make the ganache: In a microwave-safe bowl, combine 1/2 cup chocolate and 1/2 cup heavy cream. Heat for 30 seconds, stir, then heat in 10–20 second intervals, stirring between each, until a thick, glossy ganache forms. Pour the ganache over the chilled Oreo crust and arrange the whole strawberries on top. Return to the refrigerator for 5–10 minutes to set the ganache.
6. Finish the filling: In a chilled bowl with chilled beaters, whip 1 cup heavy cream to stiff peaks. Gently fold the whipped cream into the chilled chocolate-cream cheese mixture until uniform and airy. Spoon the filling over the strawberries and ganache layer, smoothing the top.
7. Garnish with grated chocolate shavings and chill the assembled pie for 3–4 hours before serving. Store in the refrigerator; best eaten within 1–2 days as the strawberries release juice over time.
