The Only Chip Dip You Need

This chunky guacamole is the kind of easy homemade dip that disappears fast. It is creamy, fresh, bright, and full of texture, with ripe avocados, finely minced red onion, grated sweet onion, lime juice, cilantro, and just the right amount of seasoning.
The best part of this guacamole recipe is the balance. The avocado stays rich and buttery, while the lime adds a clean, zesty finish. The red onion gives every scoop a little crunch, and the grated onion blends into the dip for a deeper savory flavor without overpowering it.
This is a perfect chip dip for parties, cookouts, game day, taco night, or any time you want a simple appetizer that tastes fresh and homemade. Serve it with crispy tortilla chips, spoon it over tacos, add it to burrito bowls, or use it as a topping for your favorite Mexican-inspired dishes.
I especially love the chunky texture. Instead of mashing the avocado until it is completely smooth, this version keeps some larger pieces intact. Those chunks make every bite satisfying, whether you are scooping it with chips or adding it to a plate of nachos, quesadillas, or grilled meat.

This guacamole is simple enough for a weeknight snack but flavorful enough to serve to guests. The ingredients are easy to prepare, and the entire recipe comes together quickly once your avocados are ripe and ready.

Onion Juice, The Secret Ingredient
One of the unique ingredients in this guacamole is onion juice. It is optional, but it adds a wonderful savory flavor that blends smoothly into the avocado. If you enjoy onion flavor but do not want too many onion pieces in every bite, onion juice is a helpful ingredient to keep in your pantry.
In my experience, onion juice also seems to help the avocado stay fresh-looking a little longer. That is not a scientific claim, but it is one reason I like using it when making guacamole for gatherings or when the dip may sit out for a short time before serving.
If you do not have onion juice, you can still make this recipe. The grated sweet onion and minced red onion provide plenty of flavor on their own. The onion juice simply gives the dip an extra layer of depth.
Where To Buy Onion Juice
Onion juice can often be found in regular grocery stores, even though it may not be an item you have noticed before. Depending on the store, it may be located near pickles, condiments, cocktail mixers, bitters, or specialty juices.
It is one of those pantry ingredients that is easy to overlook until you know to look for it. Once you have it on hand, it can be used in much more than guacamole.
Other Uses
Onion juice is useful in salad dressings, soups, marinades, and Bloody Marys. It is especially handy in meat marinades because it gives you onion flavor without leaving onion pieces behind that may burn when grilled over high heat.
A small amount goes a long way, so start lightly and adjust to your taste. It is a simple way to add savory flavor without changing the texture of a dish.

Celery Powder
Another ingredient that makes this guacamole special is celery powder. It may not be a common ingredient in every kitchen, but it brings a subtle, savory flavor that works beautifully with avocado, onion, lime, salt, and pepper.
Celery powder adds depth without adding crunchy celery pieces. That means you get the flavor benefit while keeping the texture of the guacamole focused on creamy avocado and finely chopped onion.
If you are making this recipe for the first time, try the celery powder as written. It is a small addition, but it helps the finished dip taste more rounded and flavorful.
Other Uses For Celery Powder
Celery powder can be used in salad dressings, soups, tuna salad, and even smoothies. It is a versatile pantry ingredient when you want a mild celery flavor without chopping fresh celery.
In this guacamole, it blends quietly into the background and enhances the fresh ingredients. You may be surprised by how much flavor it adds without standing out too strongly.

Salsa Too
If you want to serve salsa alongside this homemade guacamole, a restaurant-style salsa makes a great pairing. The bright tomato flavor and smooth salsa texture work perfectly with a chunky avocado dip and a bowl of tortilla chips.
Together, salsa and guacamole make an easy appetizer spread for casual entertaining. Add chips, lime wedges, and your favorite Mexican-inspired dishes, and you have a fresh, flavorful setup that guests will love.

Once you make this guacamole at home, it may be hard to go back to the store-bought kind. The fresh lime, ripe avocado, onions, and seasonings give it a flavor that tastes bright, clean, and homemade.
For the best results, serve it immediately after mixing. If you need to make it shortly ahead of time, press it into a bowl, cover it tightly, and keep it chilled until serving.
The Best Guacamole
This chunky homemade guacamole is creamy, fresh, and full of flavor. Ripe avocados are mixed with grated sweet onion, minced red onion, lime juice, celery powder, salt, pepper, and optional cilantro for a simple dip that is perfect with tortilla chips or as a topping for tacos, nachos, burrito bowls, and more.
Ingredients
- 4 to 6 ripe avocados
- 1 small yellow onion or any sweet onion
- 1 small red onion, minced
- 1 tablespoon onion juice, optional
- 1 teaspoon celery powder
- 1 1/2 teaspoons salt, or to taste
- 1/2 teaspoon black pepper, or to taste
- 1 tablespoon finely minced cilantro, optional
- Juice of 1 lime
Instructions
- Slice the avocados in half, remove the pits, and scoop the avocado into a large bowl. If you want extra chunks, set one avocado aside, dice it, and fold it in at the end.
- Grate the yellow or sweet onion into a bowl using a cheese grater, making sure to save the onion juice that collects.
- Finely dice the red onion into very small pieces.
- Add the grated onion, reserved onion juice, optional bottled onion juice, salt, black pepper, and celery powder to the avocado. Use a fork or chopper to mash the avocado until it is slightly creamy but still chunky.
- Fold in the minced red onion. Squeeze the lime juice over the guacamole and gently mix until combined.
- Add the cilantro and the reserved diced avocado, if using. Fold carefully so the avocado pieces stay mostly intact.
- Transfer the guacamole to a serving bowl, sprinkle a little extra salt on top if desired, and serve immediately.
