1) Tear one block of extra-firm tofu into medium pieces and boil in heavily salted water for five minutes.
2) Drain and set the tofu on paper towels to cool and dry slightly.
3) Prepare a tandoori marinade using turmeric, coriander, Kashmiri chili powder, fenugreek leaves, lemon juice, ginger and garlic paste, and oil. (Full measurements are in the cookbook.)
4) Coat the tofu in the marinade and lightly spray or brush with oil, then air-fry at 400°F for 15–20 minutes until edges are crisp.
5) Serve with a cilantro-lime chutney made from cilantro, mint, Serrano or similar chili, lemon, a dollop of yogurt, and salt.
12. Bonus Recipe: Tofu Salmon Bowl

Recipe details:
1 cup cooked basmati rice
1/2 avocado, sliced
Cucumber salad: thinly sliced English cucumber dressed with a splash of sesame oil, light and dark soy sauce, and rice vinegar
