Happy first day of March! After a slow, chilly start to the year, I’m ready for everything spring and Easter. I don’t bake often, so I try to make holiday baking special. This year I made caramel brownies with an Easter egg hunt theme—green icing “grass” topped with M&M’S® Caramel candies that I picked up at my local Walmart. Scroll down for the full M&M’S® Easter Egg Hunt Caramel Brownie recipe and tips for decorating and serving.

M&M’S® Caramel and STARBURST® Jellybeans are great for baking, decorating cakes or cookies, and filling Easter eggs. They add color, texture, and a fun, festive touch to any spring dessert.

Spring always feels brighter, and this year is extra special because we’ll be celebrating Lauren’s first birthday shortly after Easter. Even big retailers are already full of Easter decorations and candy — I found the M&M’S® Caramel Laydown Bag in the holiday aisle alongside baskets and decorative eggs.

This caramel brownie recipe is easy and indulgent. To save time I start with a boxed chocolate cake mix and build layers of chocolate, caramel, and M&M’S® Caramel on top. The result is gooey, chocolatey, and crowd-pleasing—perfect for holiday gatherings.

Ingredients

  • M&M’S® Caramel Laydown Bag
  • Green icing (for “grass” decoration)
  • 1 package chocolate cake mix
  • 1 cup evaporated milk
  • 1/2 cup (1 stick) melted butter or margarine
  • 10-oz package caramels
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the cake mix with 2/3 cup of the evaporated milk and the melted butter until well blended.
  3. Spread half of the batter into an ungreased baking pan, smoothing it into an even layer.
  4. Bake the first layer for 15–20 minutes, then remove it from the oven.
  5. While the brownie base bakes, heat the caramels with the remaining evaporated milk in a small saucepan over low heat. Stir constantly until the caramels fully melt and the mixture is smooth.

  1. Sprinkle the chocolate chips evenly over the baked brownie layer.
  2. Drizzle about half of the warm caramel mixture over the chocolate chips. For an extra gooey texture, you can use the full caramel mixture.

  1. Drop spoonfuls of the remaining batter over the caramel and chips—use a tablespoon or a small ice cream scoop—to create a rustic marbled top.
  2. Bake the assembled pan for about 25 minutes, or until the center is set and a toothpick inserted near the middle comes out with a few moist crumbs (not wet batter).

Allow the brownies to cool completely before decorating. This helps the caramel and chocolate layers set and makes cutting cleaner.

When cooled, spread green icing across the top. I use a fork to create a grassy texture, but you can pipe the icing with a grass tip for a more polished look. Arrange M&M’S® Caramel candies around the top to mimic an Easter egg hunt—scatter them or make small clusters for visual interest.

These bars are rich and satisfying—perfect to serve on a dessert table, at an Easter brunch, or as a special birthday treat for a spring celebration.

For simple Easter table decor, I like to add playful touches like bunny-ear details on serving bowls. Pipe cleaners are inexpensive and easy to shape—attach them to the back of bowls for a quick, festive accent.
