Chilli Cheese Garlic Bread

Ingredients

  • 2–3 slices sandwich bread
  • 1/4 cup grated mozzarella cheese
  • 1/4 teaspoon freshly grated garlic
  • 1.5 teaspoons cream
  • 2 green chillies, finely chopped (adjust to taste)
  • 1 teaspoon very finely chopped capsicum (bell pepper)
  • 1/2 teaspoon very finely chopped coriander (cilantro)
  • 1/4 teaspoon salt
  • 1/4 teaspoon Italian seasoning
  • Softened butter for spreading

Instructions

  1. In a bowl, mix the grated mozzarella, grated garlic, cream, chopped green chillies, finely chopped capsicum, finely chopped coriander, salt and Italian seasoning until well combined.
  2. Spread butter on one side of each bread slice. Spread an even layer of the cheese mixture on the other (unbuttered) side.
  3. Heat a non-stick pan over low heat. Place the bread buttered-side down in the pan.
  4. Place a small bowl of water in the pan and cover with a lid to trap steam. Cook for about 2 minutes or until the bottom of the bread is golden and the cheese has melted completely.
  5. Remove carefully, transfer to a plate, cut into pieces and serve immediately while hot.
